Miso Garlic Quinoa

This recipe makes for a great addition to any salad, a delicious side dish, or a hearty base for a buddha bowl. Quinoa is a great gluten free source of antioxidants and plant-based protein. Miso paste is made from fermented soybeans and grains that contain millions of beneficial bacteria – great for your gut health!

  • 1 tsp Coconut Oil
  • 2 cloves of Garlic, sliced
  • 2 cups of Bone Broth
  • 1 tbsp of Ginger
  • 1 tsp of Miso Paste
  • 1 cup of organic Quinoa
  • 2 Scallions, chopped

Heat coconut oil in a pot. Add garlic and let cook for 1-2 minutes until fragrant. Add your bone broth, half of the ginger, and miso. Stir until miso paste is dissolved and bring to a boil. Add quinoa, and cover. Let simmer for about 15 minutes or until all the liquid is absorbed. Mix in the last half of your ginger and scallions then serve.
